Inspired by the traditional Indian desserts, Kulfi and Lassi, delicious and refreshing desserts which were once commonly peddled by street vendors, but have since been replaced by more commercial producers.

Kulfi originated in the 16th century and traditionally made without refrigeration by filling evaporated milk mixed with nuts and spice such as saffron and pistachios into metal cones dowsed in a slurry of ice and salt.

Lassi is one of the first yogurt smoothies in the world with origins dating back 1000 BC in Punjab where yogurt is mixed together with fruits such as mango and honey in a clay pot to cool it down.

This cocktail offers insight into the lesser known desserts of Indian cuisine by combining both concepts together with an alcoholic twist, and offers interactivity by allowing guests to ‘churn’ their own ice-cream.
