Draws inspiration from the Aiyu Jelly, a popular Taiwanese summertime treat where it is consumed to relieve the tropical heat. Singaporeans call it Ice Jelly as it looks like ice in the summer, and is commonly eaten with longans, cocktail fruit, and calamansi.
The jelly is made from the gel secreted by the seeds of a creeping fig plant, which was first discovered by a Taiwanese tea businessman in the 1800s. The businessman delegated the task of selling this jelly to his daughter “Aiyu”, which remains popular till today.
Served as a frozen sorbet by blending with dry ice, transpiring in a light & refreshing cocktail dessert. The smoke emitted is scented with key lime scent, further adding to the citrusy refreshing profile of the drink.
