Hopscotch Paint Splat

The Northern Star is inspired by the “Black Tortoise”, one of the four symbols of the Chinese Constellations. The symbol signifies the North, and the Winter season, and symbolises longevity, wisdom, and resilience.

To represent the tortoise, we use “Gui Ling Gao” jelly, an ingredient which used to be made from grinding the underside of the shell. It was a delicacy exclusive to royalty. The drink is paired with a refreshing sea coconut remedy, rye and Fernet Branca, an Italian amaro, giving rise to a refreshing and minty spirit forward cocktail with a medicial kick.

They say that the stars never lie about life, and with this drink, we hope that you will be blessed with longevity, wisdom, and vitality.
