Trade Winds provides a glimpse into a time when the Singapore River was at its most active as it played a quintessential role in Singapore’s success today. The mouth of the Singapore river was located in a strategic spot that facilitated a busy riverbank.

Featuring ingredients commonly peddled in the area back then such as Kacang Puteh, mangos and spices in the salsa packed into a seashell that rests atop the cocktail.

The spice trade was dominated by star anise, cloves and nutmeg, all of which were transported in burlap sacks from larger vessels by their traders into sampan boats, hence the shape of the glass and boat.

Finally, this cocktail also offers some insight into the history of the Singapore River as a saltwater river, offering a taste of the sea in the form of plankton and kombu.
